The kids are coming home tomorrow. Ashley is getting married in September and we are going wedding shopping. The wedding is here at our home in Connecticut and I am cooking. Ashley is a little picky, so we’ll be practicing some dishes to make sure they please her delicate palate.
Today I’m making tequila-lime chicken. I haven’t figured out the proportions yet, but the ingredients are olive oil, tequila, Triple sec, lime juice and zest, jalapeño, garlic, and maybe orange juice, though at the moment, I am thinking of grilling the orange slices and using them as a garnish with chopped cilantro.
I’m off to the kitchen to experiment and marinate the chicken overnight.
