Biscotti – My Nemesis No More

I love biscotti. I’ve tried to make them a few times, few and far between because the result was so discouraging. They always fell apart when I sliced them.

Today I just had to have some and I was determined to make them myself. I searched the internet and fell upon Stephanie Jaworski has a comprehensive site devoted to all things baking. I found several biscotti recipes and a video of her demonstrating Cranberry Pistachio Biscotti. Watching her showed me the techniques I’d been lacking in successfully forming (I always formed the dough in the pan, too messy and sticky) and baking (I never knew how to judge the halfway done texture and always took them out too early).

I used her Chocolate Almond Biscotti recipe and they came out perfectly! Thanks Stephanie!!!
